Spaghetti Bolognese

A classic Italian ragu of rich meat sauce slowly simmered with aromatic vegetables, served over al dente spaghetti.

Heat olive oil in a large pot. Add chopped onion, carrot, and celery. Sauté until softened, about 8 minutes.

Add minced beef to the pot. Break it up with a spoon and brown thoroughly, about 7 minutes. Drain excess fat if necessary.

Stir in tomato paste and cook for 1 minute. Pour in red wine and let it reduce by half, about 3 minutes. Add crushed tomatoes, salt, and black pepper.

Bring the sauce to a gentle simmer. Reduce heat to low, cover, and let it cook for at least 45 minutes, stirring occasionally. For a richer flavor, simmer up to 60 minutes.

While the sauce simmers, cook spaghetti according to package directions in a separate pot of salted boiling water until al dente, about 10 minutes.

Drain spaghetti and serve immediately with the rich Bolognese sauce.
