Cheese Tart (Savory Quiche) with a Large Salad

A classic Swiss cheese tart, golden and savory, served with a crisp, fresh green salad. Perfect for a satisfying lunch or dinner.

Preheat oven to 200°C (400°F). Roll out the shortcrust pastry and line a pie dish (approx. 26 cm diameter) with it. Prick the bottom several times with a fork.

Spread the grated cheese evenly over the pastry base.

In a bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and a pinch of ground nutmeg until well combined.

Carefully pour the egg and cream mixture over the cheese in the pie dish. Bake for 40-45 minutes, or until golden brown and set.

While the tart is baking, wash the mixed green salad. Prepare a simple vinaigrette by whisking together the olive oil and white wine vinegar.

Let the cheese tart cool for a few minutes before slicing. Serve warm with the fresh green salad dressed with vinaigrette.
