Riz Casimir is a classic Swiss comfort food featuring tender chicken and exotic fruits like pineapple and banana in a mild, creamy curry sauce, served with fluffy rice. It's a delightful blend of sweet and savory flavours that pleases all ages.

Cook the rice. Rinse the rice thoroughly. In a saucepan, bring water and half a teaspoon of salt to a boil. Add the rice, reduce heat, cover, and simmer for 15-18 minutes until the water is absorbed and the rice is tender.

Prepare chicken and onion. Cut the chicken breast into bite-sized pieces. Peel and finely chop the onion.

Saute chicken and onion. Heat the vegetable oil in a large pan over medium-high heat. Add the chicken pieces and cook until lightly browned. Add the chopped onion and cook until softened, about 5 minutes.

Add curry and cream. Stir in the curry powder and cook for 1 minute until fragrant. Pour in the cream, stir well, and bring to a gentle simmer. Season with the remaining salt and black pepper.

Prepare fruit. Drain the canned pineapple chunks. Peel the bananas and slice them. Add the pineapple chunks and sliced bananas to the curry sauce and heat through gently for 2-3 minutes.
