Sausages in Pastry with Mixed Green Salad
These golden-baked sausages wrapped in flaky pastry, paired with a fresh, colourful salad, make for a delightful and satisfying meal. A simple yet beloved classic perfect for a casual lunch or dinner.

Preheat your oven to 200°C (fan 180°C). Unroll the puff pastry and cut it into 8 equal strips. Wrap each Wiener sausage spirally with one strip of pastry, ensuring the ends are well sealed.

Place the wrapped sausages on a baking tray lined with baking paper. Whisk the egg and brush the pastry with it. Bake for 18-20 minutes until golden brown and puffed up.

While the sausages are baking, prepare the salad dressing. In a small bowl, combine olive oil, white wine vinegar, mustard, salt, and black pepper. Whisk until well combined.

Wash and dry the mixed green salad. Just before serving, toss the salad greens with the prepared dressing in a large bowl.
