Asian Wok Noodles with Chicken
Quick to prepare and full of flavor, these Asian wok noodles with tender chicken and crisp vegetables are perfect for a satisfying meal any day of the week.

Dice the chicken breast into bite-sized pieces. Slice the bell pepper, carrots, and onion into thin strips. Mince the fresh ginger and garlic cloves. In a small bowl, whisk together the soy sauce and sesame oil.
Bring a large pot of water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain well and set aside.
Heat 15 ml of vegetable oil in a large wok or deep pan over high heat. Add the diced chicken and stir-fry for 4-5 minutes until cooked through and lightly browned. Remove the chicken from the wok and set it aside.
Add the remaining 15 ml of vegetable oil to the wok. Add the sliced onion, carrots, and bell pepper. Stir-fry for 3-4 minutes until the vegetables are slightly tender-crisp. Add the minced ginger and garlic and stir-fry for another minute until fragrant.
Return the cooked chicken to the wok with the vegetables. Add the drained noodles and the prepared sauce mixture. Toss everything together for 1-2 minutes until all ingredients are heated through and evenly coated with the sauce. Serve immediately.
