A classic Cretan meze, Dakos features crisp barley rusks topped with fresh grated tomato, salty feta, and a generous drizzle of olive oil and oregano. It's a simple yet incredibly flavorful dish perfect for a light meal or appetizer.

Lightly moisten the rusks with a little water or olive oil to soften them slightly, but ensure they retain some crunch.

Grate the fresh tomatoes into a bowl. Season with salt and black pepper to taste.

Arrange the moistened rusks on individual serving plates. Top each rusk generously with the grated tomato mixture.

Crumble the feta cheese over the tomatoes. Distribute the thinly sliced red onion and Kalamata olives evenly among the rusks.
