Fattoush
Fattoush is a vibrant Lebanese bread salad featuring crispy pita, mixed greens, and a tangy sumac-lemon dressing. It's a refreshing and wholesome dish perfect for any meal.

Preheat your oven to 200°C (390°F) or a medium-hot pan. Cut the pita bread into bite-sized pieces and either toast them in the oven for 5-7 minutes until golden and crispy, or fry them in a little oil until crunchy. Set aside to cool.

While the pita cools, wash and chop the romaine lettuce. Dice the cucumber, tomatoes, radishes, and green bell pepper. Thinly slice the red onion. Roughly chop the fresh mint leaves.

In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, sumac, salt, and black pepper until well combined.

In a large salad bowl, combine all the chopped vegetables and fresh mint. Add the cooled crispy pita pieces and pour the dressing over everything. Toss gently to ensure all ingredients are evenly coated. Serve immediately.
