Kisir
Kısır is a vibrant and refreshing Turkish bulgur salad, rich in herbs and fresh vegetables. It's a light yet satisfying dish, perfect as a side or a main course.
Steps

Place bulgur in a large bowl. Pour hot water over it, cover, and let it soak for 15-20 minutes until the bulgur is tender and has absorbed the water.

While the bulgur soaks, finely chop the onion, cucumber, and tomatoes. Roughly chop the fresh parsley and mint.

In a separate small bowl, combine the tomato paste, olive oil, juice of half a lemon, salt, black pepper, and red pepper flakes. Mix well.

Once the bulgur is ready, fluff it with a fork. Add the paste mixture to the bulgur and knead gently with your hands for a few minutes to ensure the flavors are well combined and the bulgur is evenly colored.

Add the chopped onion, cucumber, tomatoes, parsley, and mint to the bulgur mixture. Squeeze in the juice of the remaining half lemon. Mix everything thoroughly with a spoon or your hands.

Taste and adjust seasoning if necessary. Serve Kısır chilled or at room temperature.
