Oven-Baked Meatloaf (Fleischkäse) with Fried Egg and Spinach
A hearty, classic German dish featuring golden-brown baked meatloaf, creamy spinach, and a fried egg. Perfect for a satisfying lunch or dinner.

Preheat your oven to 200°C (390°F) convection or 220°C (425°F) top/bottom heat. Place the Fleischkäse slices on a baking sheet lined with parchment paper.

Wash the fresh spinach thoroughly. Peel and finely chop the onion and garlic.

Heat 20g of butter in a large pan over medium heat. Add the chopped onion and saute until translucent, about 3 minutes. Add the garlic and cook for another minute until fragrant. Add the fresh spinach, season with a pinch of salt and pepper, and a dash of nutmeg. Cook, stirring occasionally, until the spinach wilts, about 3-5 minutes.

Place the baking sheet with Fleischkäse into the preheated oven. Bake for 15-20 minutes until golden brown and heated through.

While the Fleischkäse is baking, melt the remaining 20g of butter in another pan over medium heat. Crack the eggs into the pan and fry them to your desired doneness, usually 3-4 minutes for a runny yolk. Season with the remaining salt and pepper.

Arrange a slice of warm Fleischkäse on each plate, top with a generous portion of creamed spinach, and crown with a freshly fried egg. Serve immediately.
