Preheat your oven to 220°C (425°F) top/bottom heat. Unroll the Flammkuchen dough on a baking sheet lined with parchment paper.

Thinly slice the red onion into rings. Wash and core the pears, then slice them thinly. Crumble the goat cheese. Pluck the thyme leaves from the sprigs.

Spread the creme fraiche evenly over the dough, leaving a small border. Arrange the sliced pears and red onion on top. Distribute the crumbled goat cheese. Drizzle with honey, season with salt and pepper, and sprinkle with fresh thyme.

Bake for 15-20 minutes until the crust is golden brown and the cheese is lightly melted and golden.
