Peel and finely dice the onion. Wash the fresh chives, shake dry, and chop finely. Set the chives aside for garnishing.

Melt the butter in a large frying pan over medium heat. Add the diced onion and sauté for about 5 minutes until it is soft and golden brown.

Add the fresh Spätzli to the pan with the onions. Fry for about 8 minutes, stirring occasionally, until they are lightly browned and heated through.

Pour in the vegetable stock, season with salt and black pepper. Stir well and cook for another 3 minutes until most of the liquid has been absorbed.

Serve the Spätzli pan hot, garnished with the freshly chopped chives.
