Paleo Banana Pancakes

In a medium bowl, thoroughly mash the ripe bananas with a fork until smooth.

Whisk the eggs in a separate bowl. Add them to the mashed bananas along with the vanilla extract and salt. Mix until well combined.

Stir in the almond flour and baking powder. Mix until just combined, being careful not to overmix.

Heat a large non-stick pan over medium heat and add a small amount of coconut oil. Pour about 2-3 tablespoons of batter per pancake onto the pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
