Grilled Beef Steaks with Homemade Herb Butter

To prepare the herb butter, allow the butter to soften at room temperature. Finely chop the fresh parsley and chives. Mince the garlic cloves. In a small bowl, combine the softened butter with the chopped herbs, minced garlic, a pinch (2g) of salt, and a pinch (1g) of black pepper. Mix well until everything is evenly combined.

Pat the beef steaks dry with paper towels. Rub them generously with olive oil on both sides. Season the steaks evenly with the remaining salt (3g) and black pepper (1g).

Heat a grill or a heavy-bottomed grill pan over high heat until smoking. Place the seasoned steaks on the hot grill. Grill for 3-4 minutes per side for a medium-rare doneness, or adjust the cooking time to achieve your preferred level of doneness. Avoid moving the steaks too much to get a good crust.

Once cooked, remove the steaks from the grill and let them rest on a cutting board or platter for 5-7 minutes. This allows the juices to redistribute, ensuring a tender and flavorful steak. Just before serving, top each steak with a generous slice of the homemade herb butter. Serve immediately.
