Tabbouleh
A refreshing Middle Eastern salad made with fine bulgur, fresh parsley, mint, tomatoes, and a zesty lemon dressing.
Steps

Rinse the fine bulgur under cold water and then soak it in a bowl with enough cold water to cover for 15-20 minutes, until tender. Drain well and squeeze out any excess water.

While the bulgur is soaking, finely chop the fresh parsley, mint, green onions, tomatoes, and cucumber.

Juice the lemons. In a small bowl, whisk together the fresh lemon juice, olive oil, salt, and black pepper to create the dressing.

In a large bowl, combine the prepared bulgur with all the chopped vegetables and herbs. Pour the dressing over and mix thoroughly. Let it rest for 5 minutes before serving to allow the flavors to meld.
