Asparagus & Ricotta Puff Pastry Tart
This simple yet elegant puff pastry tart features a creamy ricotta base topped with fresh green asparagus, baked to golden perfection. It's a delightful dish for a light lunch or dinner.

Preheat your oven to 200°C (400°F). Trim the woody ends off the asparagus spears. You can snap them by hand where they naturally break, or simply cut about 2-3 cm off the bottom.

In a medium bowl, combine the ricotta cheese, grated Parmesan, and egg. Mince the garlic clove and add it to the mixture. Season with salt and black pepper, then stir well until everything is combined.

Unroll the puff pastry onto a baking sheet lined with parchment paper. Score a border about 1.5 cm (0.6 inches) from the edge with a knife, being careful not to cut all the way through. Spread the ricotta mixture evenly within the scored border. Arrange the trimmed asparagus spears on top of the ricotta.

Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up, and the asparagus is tender. The ricotta filling should also be set.
