Prepare the pancake batter: In a mixing bowl, whisk together the wheat flour, eggs, milk, and salt until you have a smooth batter.

Cook the pancakes: Heat a small amount of butter in a frying pan over medium heat. Pour a thin layer of batter into the pan and cook for 1-2 minutes until golden brown, then flip and cook the other side. Repeat with the remaining batter, adding more butter as needed.

Slice the pancakes: Let the cooked pancakes cool slightly. Roll them up tightly and cut them into very thin strips (Flädle).

Heat the broth: In a saucepan, bring the beef broth to a gentle simmer.
