Cook the penne pasta according to package instructions until al dente. Drain, rinse under cold water, and let it cool completely.

While the pasta cools, halve the cherry tomatoes, dice the cucumber, and finely slice the red onion.

Toast the pine nuts in a dry frying pan over medium heat for 2-3 minutes until golden and fragrant. Be careful not to burn them.

Crumble the feta cheese into small pieces.

Prepare the dressing by whisking together the green pesto, olive oil, balsamic vinegar, remaining salt, and black pepper in a small bowl.
