Cut the chicken breast into bite-sized cubes. Chop the bell peppers and red onion into roughly 2-3 cm pieces. Leave the cherry tomatoes whole.

In a large bowl, whisk together the olive oil, juice from both limes, smoked paprika, cumin powder, chili powder, garlic powder, dried oregano, salt, and black pepper to create the marinade.

Add the chicken cubes, chopped bell peppers, red onion, and cherry tomatoes to the bowl with the marinade. Toss everything thoroughly to ensure all pieces are well coated.

Thread the marinated chicken and vegetables alternately onto skewers. Arrange the skewers in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
