Chana Masala

A classic Indian chickpea curry, rich in spices and tomatoes, perfect for a comforting and flavorful meal.

Finely chop the onion. Mince the garlic and ginger. Roughly chop the fresh cilantro for garnish.

Heat vegetable oil in a large pot or pan over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes. Add minced garlic and ginger and cook for another minute until fragrant.

Stir in ground cumin, ground coriander, ground turmeric, garam masala, and salt. Cook for 1 minute, stirring constantly, until fragrant. Pour in the crushed tomatoes and mix well.

Add the drained chickpeas and water to the pot. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for 10-12 minutes, allowing the flavors to meld. Stir occasionally.

Remove from heat. Garnish generously with fresh cilantro and serve hot with rice or flatbread.
