These crunchy, cheesy chickpeas added to a fresh Caesar salad provide extra crunch, extra protein, and extra goodness! This salad is absolutely delicious and is something everyone will appreciate.

Preheat your oven to 190°C (375°F). In a bowl, mix the oil, garlic powder, salt, and black pepper for the croutons. Pour this mixture over the cubed bread roll and toss until evenly coated.

Spread the seasoned bread cubes on a lined baking sheet and bake for 20 minutes, or until golden and crispy.

Line a separate baking sheet with baking paper for the chickpeas.

In a bowl, toss the drained and dried chickpeas with olive oil, salt, paprika, garlic powder, and lemon juice. Spread them evenly on the prepared baking sheet.

Bake the chickpeas for 25 minutes until lightly crispy.

Remove the chickpeas from the oven, sprinkle with shredded cheese, and return to the oven for another 5 minutes, or until the cheese is melted and golden brown.

While the chickpeas and croutons are baking, prepare the Caesar dressing. Mix mayonnaise, sugar, lemon juice, water, frozen garlic, salt, and pepper in a bowl. Blend with a hand blender until smooth. Add a drop more water if needed for desired consistency.

In a large serving bowl, combine the romaine lettuce, thinly sliced purple onion, and sliced cherry tomatoes.

Pour the prepared Caesar dressing over the salad base and mix well to coat all the ingredients.

Finally, top the salad with the homemade croutons and crispy cheesy chickpeas before serving.
