Garlic Butter Shrimp and Asparagus Toss
A quick and delicious skillet meal featuring tender shrimp and crisp asparagus bathed in a fragrant garlic butter sauce. Perfect for a light yet satisfying dinner.
Steps
1
Prepare the ingredients: Peel and devein the shrimp. Trim the woody ends off the asparagus and cut them into 2-inch pieces. Mince the garlic cloves. Chop the fresh parsley. Cut the lemon in half.
2
Heat a large skillet over medium-high heat. Add half of the olive oil. Add the asparagus and cook for 3-5 minutes, until tender-crisp. Season with a pinch of salt and pepper. Remove the asparagus from the skillet and set aside.
3
Add the remaining olive oil to the same skillet. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Add the minced garlic and cook for another minute until fragrant.
4
Return the cooked asparagus to the skillet with the shrimp. Add the butter and the juice from half of the lemon. Stir until the butter is melted and everything is coated in the sauce. Stir in the chopped parsley.
5
Season with the remaining salt and pepper to taste. Serve immediately, garnished with a lemon wedge if desired.
