Mediterranean Turkey Burger

In a large bowl, combine the ground turkey, finely chopped red onion, fresh parsley, lemon juice, dried oregano, salt, and black pepper. Mix until just combined, being careful not to overmix. Form the mixture into four equally sized patties.

Heat the olive oil in a large skillet over medium-high heat. Add the turkey burgers and cook for 4-5 minutes per side, or until cooked through and golden brown.

Toast the burger buns, if desired.

Assemble the burgers: Spread hummus on both sides of the toasted buns. Add a turkey patty, then top with romaine lettuce, cucumber, sliced red onion, and crumbled feta cheese. Serve immediately.
