Piyaz is a refreshing and hearty Turkish white bean salad, typically served as a meze or light main course. It combines tender white beans with fresh vegetables, hard-boiled eggs, and a zesty, aromatic dressing.

Drain and rinse the canned white beans thoroughly under cold water. Set aside to drain completely.

Finely slice the red onion. Dice the tomatoes into small cubes. Roughly chop the fresh parsley.

Peel the hard-boiled eggs and cut them into quarters or thick slices.

In a small bowl, whisk together the olive oil, red wine vinegar, sumac, salt, and black pepper to create the dressing.

In a large bowl, combine the drained white beans, sliced red onion, diced tomatoes, and chopped parsley. Pour the dressing over the salad and toss gently to combine.

Arrange the sliced hard-boiled eggs on top of the salad just before serving. Serve chilled or at room temperature.
