Spicy Lentil Flatbreads
These vibrant, spiced lentil flatbreads offer a delicious vegan alternative, combining tender lentils with aromatic spices and a crispy base for a satisfying meal.

Cook the red lentils in plenty of water according to package instructions until tender, about 15 minutes. Drain well and set aside.

While the lentils cook, finely chop the onion and mince the garlic. Heat the olive oil in a pan over medium heat, then sauté the onion until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.

Stir in the tomato paste, chopped roasted red peppers, ground cumin, and smoked paprika. Cook for 2-3 minutes, stirring constantly, to deepen the flavors. Season with half of the salt and black pepper.

Combine the cooked lentils with the sautéed pepper mixture. Stir in the freshly chopped coriander and lemon juice. Taste and adjust seasoning with the remaining salt and pepper as needed.

Preheat your oven to 220°C (fan-assisted). Unroll the pizza dough and divide it into 4 equal portions. Roll each portion into a thin, oval flatbread. Spread an even layer of the lentil filling over each flatbread, leaving a small border. Bake for 15-20 minutes, or until the crust is golden brown and the topping is slightly crisp.

Thinly slice the red onion and roughly chop the fresh mint. Garnish the warm lentil flatbreads generously with the sliced red onion and fresh mint before serving.
