Quark Bread Caprese

Preheat your oven to 180°C (350°F). In a large bowl, combine the low-fat quark, all-purpose flour, baking powder, and salt. Knead the ingredients until a smooth, cohesive dough forms.

Divide the dough into four equal portions and shape each into an elongated loaf. Lightly brush the loaves with olive oil. Place them on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown. Let them cool slightly after baking.

While the quark bread bakes, prepare the toppings. Slice the fresh tomatoes into rounds and the mozzarella into similar slices or small pieces.

Once the quark bread has cooled slightly, carefully slice each loaf horizontally in half. Spread a generous amount of pesto evenly over the bottom half of each bread.

Arrange the sliced tomatoes and mozzarella over the pesto on each bread half. Drizzle with balsamic glaze and scatter fresh basil leaves generously on top before serving immediately.
