Salmon Burgers
Topped with melty Havarti and caramelized onions and seasoned with Old Bay, these homemade salmon burgers are a delicious and healthy meal for any day of the week.

Make the salmon mixture. Add the salmon to the base of a food processor and pulse until coarsely chopped, but not a paste. Transfer to a large bowl. Add the beaten egg, panko breadcrumbs, onion powder, garlic powder, 2 teaspoons Old Bay seasoning, mustard powder, 1 tablespoon fresh lemon juice, and 2.5 tablespoons minced fresh chives. Mix until just combined. Form the mixture into 4 patties.

While the patties chill (optional), prepare the Old Bay Mayonnaise. In a small bowl, combine the mayonnaise, 1 tablespoon minced chives, 2 teaspoons Old Bay seasoning, and 2 teaspoons fresh lemon juice. Stir until well combined.

Cook the salmon burgers. Heat the vegetable oil in a large skillet over medium-high heat or preheat your grill. Cook the patties for 2-3 minutes per side, until golden brown and cooked through. During the last minute of cooking, place a slice of Havarti dill cheese on top of each patty to melt.

Assemble and serve. Toast the brioche buns. Spread a generous amount of Old Bay Mayonnaise on both halves of each toasted bun. Place a cooked salmon patty on the bottom bun, then top with caramelized onions and sliced avocado. Cover with the top bun and serve immediately.
