Shakshuka
This vibrant and comforting one-pan dish features eggs poached in a rich, spiced tomato sauce. Perfect for a hearty breakfast or a cozy brunch, it’s bursting with fresh flavors and warmth.

Heat the olive oil in a large frying pan with a lid over medium heat. Add the chopped onions, finely chopped chilli, garlic clove, and the coriander stalks (reserving leaves for garnish). Soften for 5 minutes until tender.

Stir in the cherry tomatoes and caster sugar. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until the sauce has thickened.

Using the back of a large spoon, make four indentations in the tomato sauce. Carefully crack one egg into each dip.

Cover the pan with the lid and cook over low heat for 6-8 minutes, or until the eggs are cooked to your desired consistency (the whites should be set and the yolks still runny, or fully set if preferred).

Remove from heat. Scatter with the reserved fresh coriander leaves and a handful of crumbled feta cheese. Serve immediately with crusty bread.
