Shaved Asparagus on Sourdough

Wash the green asparagus, snap off the woody ends, and use a vegetable peeler to shave the stalks lengthwise into thin ribbons.

In a small bowl, whisk together 30 ml of the olive oil, the juice of the lemon, salt, and black pepper. Finely chop the fresh mint.

Lightly toast the sourdough bread slices. Drizzle the remaining 10 ml of olive oil on each slice. Gently toss the shaved asparagus with the dressing.

Divide the dressed asparagus among the toasted sourdough slices. Garnish with shaved Parmesan cheese and the chopped fresh mint. Serve immediately.
