Shaved Asparagus on Sourdough

Enjoy a fresh and elegant appetizer or light lunch with tender asparagus ribbons, zesty lemon dressing, and fragrant mint, all served atop crispy sourdough bread.

Steps

1
Wash the green asparagus, snap off the woody ends, and use a vegetable peeler to shave the stalks lengthwise into thin ribbons.
2
In a small bowl, whisk together 30 ml of the olive oil, the juice of the lemon, salt, and black pepper. Finely chop the fresh mint.
3
Lightly toast the sourdough bread slices. Drizzle the remaining 10 ml of olive oil on each slice. Gently toss the shaved asparagus with the dressing.
4
Divide the dressed asparagus among the toasted sourdough slices. Garnish with shaved Parmesan cheese and the chopped fresh mint. Serve immediately.
