Strawberry and Cream Cheese Stuffed French Toast

Dice the strawberries finely. In a small bowl, mix the diced strawberries with 20g of granulated sugar. In another bowl, combine the cream cheese with 10g of granulated sugar and the vanilla extract until smooth.

Carefully cut a pocket into the side of each brioche slice, making sure not to cut all the way through.

Gently fill each brioche pocket with the sweetened cream cheese first, then spoon in the diced strawberries. Press the edges to seal slightly.

In a wide, shallow dish, whisk together the eggs, milk, the remaining 30g of granulated sugar, and ground cinnamon until well combined.

Heat a large non-stick pan or griddle over medium heat and melt the butter. Dip each stuffed brioche slice into the egg mixture, ensuring both sides are coated. Place in the hot pan and cook for 3-4 minutes per side, or until golden brown and cooked through. Serve immediately, optionally with a dusting of powdered sugar or fresh berries.
