Zesty Chicken and Pepper Skillet

Slice chicken breast into strips, bell peppers into thin strips, and red onion into thin half-moons. This preparation step takes about 10 minutes.

Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and fajita seasoning. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside.

Add the sliced red onion, red bell pepper, and yellow bell pepper to the same skillet. Sauté for 6-8 minutes until the vegetables are tender-crisp.

While the vegetables are cooking, bring vegetable broth to a boil in a small pot. Stir in the couscous, cover, remove from heat, and let sit for 5 minutes. Fluff with a fork.
