Baked Eggs in Asparagus Nests

Tender asparagus spears form perfect nests for baked eggs, topped with Parmesan. A simple yet elegant dish that's perfect for any meal.

Preheat your oven to 200°C (400°F). Lightly grease a baking dish with butter and sprinkle about 10g of Parmesan cheese evenly over the bottom. Trim the woody ends off the asparagus spears.

Arrange the trimmed asparagus spears in four circular 'nests' within the prepared baking dish. Drizzle the asparagus with olive oil, then season with 1g of salt and 0.5g of black pepper.

Carefully crack one large egg into the center of each asparagus nest. Sprinkle the eggs with the remaining 1g of salt, 0.5g of black pepper, and 40g of Parmesan cheese.

Bake in the preheated oven for 12-15 minutes, or until the egg whites are just set and the yolks are still wonderfully runny.

Carefully remove the baking dish from the oven and serve your baked eggs in asparagus nests immediately.
