A comforting and aromatic chicken curry, perfect for a warming meal with tender chicken pieces in a rich, spiced sauce.

Cut the chicken breast into bite-sized pieces. Finely chop the onion, mince the garlic, and grate the ginger.

Heat the vegetable oil in a large pot or deep pan over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.

Add the minced garlic, grated ginger, and curry paste to the pot. Stir well and cook for 1 minute until fragrant. Then add the chicken pieces and cook, stirring occasionally, until lightly browned on all sides, about 5-6 minutes.

Pour in the canned crushed tomatoes and coconut milk. Stir everything together, bring to a gentle simmer, then reduce heat to low, cover, and let it cook for 15 minutes, allowing the flavors to meld and the chicken to become tender.

Season the curry with salt to taste. Garnish with fresh coriander before serving.
