Chicken Tikka Masala
Tender chicken marinated in yogurt and spices, then simmered in a rich, creamy tomato sauce. A beloved Indian classic.

Cut chicken breast into 2-3 cm cubes. In a bowl, combine chicken with yogurt, 1 clove minced garlic, 10g grated ginger, 2.5g turmeric, 2.5g cumin, 2.5g paprika, and 1.5g salt. Mix well and let marinate for at least 30 minutes in the refrigerator.

Heat 15ml vegetable oil in a large pan or pot over medium-high heat. Add the marinated chicken in batches and sear until browned on all sides. Remove chicken from the pan and set aside.

Add the remaining 15ml vegetable oil to the pan. Add chopped onion and sauté until softened, about 5-7 minutes. Add the remaining 2 cloves minced garlic and 10g grated ginger, 2.5g turmeric, 2.5g cumin, 2.5g paprika, and 1.5g salt. Cook for another 1-2 minutes until fragrant.

Stir in the canned crushed tomatoes and tomato paste. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 15 minutes, allowing the flavors to meld.

Stir in the Garam Masala and heavy cream. Return the cooked chicken to the pan and mix well. Simmer for another 5 minutes until the chicken is heated through and the sauce has thickened slightly.

Garnish with freshly chopped coriander. Serve hot with rice or naan bread.
