Grilled Salmon Fillets with Couscous
Enjoy perfectly grilled salmon fillets served alongside a fresh and zesty couscous salad, a light and satisfying meal.

Bring the vegetable broth to a boil. Place the couscous in a heatproof bowl, add 1 g of salt and 10 ml of olive oil, then pour the hot broth over it. Cover and let it soak for 5-10 minutes until all liquid is absorbed.

While the couscous is soaking, wash and halve the cherry tomatoes. Wash and dice the cucumber. Wash the parsley, shake dry, and finely chop it.

Pat the salmon fillets dry with paper towels. Rub them with 10 ml of olive oil, then season generously with 2 g of salt and 1 g of black pepper.

Heat a grill pan or outdoor grill to medium-high heat. Grill the salmon fillets for 4-5 minutes per side, depending on thickness, until cooked through and flaky.

Fluff the soaked couscous with a fork. Add the chopped cherry tomatoes, diced cucumber, and chopped parsley. Squeeze the lemon juice over it, add the remaining 40 ml of olive oil, 2 g of salt, and 1 g of black pepper. Mix everything well.

Serve the grilled salmon fillets immediately with a generous portion of the fresh couscous salad.
