Hearty Beef and Bean Chili

Dice the onion and red bell pepper. Mince the garlic cloves.

Heat olive oil in a large pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

Add the diced onion, red bell pepper, and minced garlic to the pot. Cook until softened, about 5-7 minutes.

Stir in chili powder, smoked paprika, dried oregano, salt, and black pepper. Cook for 1 minute until fragrant.

Pour in the crushed tomatoes, drained kidney beans, beef broth, and add the bay leaf. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally.
