Paleo Beef and Pepper Chili

Dice the onion and red bell pepper. Mince the garlic cloves finely.

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it's browned all over. Drain off any excess fat from the pot.

Add the diced onion and red bell pepper to the pot and cook for about 5 minutes until softened. Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper, and cook for another 2-3 minutes until fragrant.

Stir in the tomato paste, canned diced tomatoes, and beef stock. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for at least 20 minutes, stirring occasionally, to allow the flavors to meld.
