Combine the rolled oats, milk, eggs, sugar, baking powder, and salt in a blender. Blend until you have a smooth batter. Let it rest for 5 minutes.

While the batter rests, wash the fresh strawberries and slice them into bite-sized pieces.

Heat a non-stick pan over medium heat and add a small amount of vegetable oil. Pour about 2-3 tablespoons of batter per pancake into the pan. Cook for 2-3 minutes per side until golden brown and cooked through. Repeat with the remaining batter.
