Chili con Carne

Finely chop the onion and garlic. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

Add the chopped onion and garlic to the pot with the browned beef. Cook for 5 minutes until softened. Stir in the chili powder and ground cumin, and cook for another minute until fragrant.

Drain and rinse the kidney beans. Add the canned chopped tomatoes, drained kidney beans, and beef broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for at least 45 minutes, stirring occasionally, allowing the flavors to meld.

Taste the chili and season with salt and black pepper as needed. Serve hot, perhaps with a dollop of sour cream, shredded cheese, or fresh cilantro (optional garnishes not included in ingredients).
