Rice Pudding with Cinnamon and Sugar

In a large pot, combine the milk, round grain rice, 30g of sugar, vanilla sugar, and a pinch of salt. Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.

Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 20-25 minutes. Stir frequently, especially towards the end, until the rice is tender and the pudding has a creamy consistency.

Ladle the warm rice pudding into serving bowls. Immediately top each serving with the remaining 20g of sugar, a sprinkle of ground cinnamon, and a small knob of butter.
